SUGOLI CON MOSTO D'UVA

Sugoli con Mosto d'Uva is a traditional dessert pudding made from the must of grapes (freshly squeezed grape juice). The pudding was historically eaten by wine harvesters during the weeks before the wine production. It was considered a wholesome, nutritious meal when served with bread and was thought to provide these laborers with ample energy to aid them in withstanding the long hours of grape harvesting. In Emilia Romagna, the grapes used to make the must are different variations of the Lambrusco grape. The dessert is made by slowly adding grape must to flour, stirring the flour, and then heating and cooling the mixture to obtain the desired texture and consistency.

Ingredients for
Sugoli con Mosto D'Uva

2 liters of grape must

10 Tbsp of white fine ‘00” flour

2 Tbsp Sugar (optional)
Recipe for
Sugoli con Mosto D'Uva
Serves 6-8

In a medium sized mixing bowl add 10 Tbsp of flour.

Slowly add the must (a shot glass at a time) to the dry ingredients, stopping after every addition to whisk the must into the flour.

Add the 2 Tbsp of sugar and whisk until the dry ingredients have dissolved into the must.

Once the mixture is homogenous, tranfser the contents to a medium sized pot, place the pot over medum-low heat and stir with a wooden spoon (always in the same direction).

The mixture should begin to coagulate within 15 minutes.

When the mixture starts to produce small bubbles, remove the pot from the heat and continue stirring slowly with the wooden spoon.

Pour the pudding into a large bowl or into small serving bowls and allow it to cool before serving Sugoli con Musto D'Uva, Made with Love.
