MARIANNE'S BARLEY & FLÄSK RECIPE
Friday was always Marianne's favorite day on the family farm. Every Friday, Marianne and her mother would spend time together baking for the next week. Marianne's mother was very busy managing the home, raising her children, and helping her father with the farm. During the long days on the farm her mother would need to make sure the family ate well for all their hard work. Marianne remembers the countless smiles on the faces of the family after they came in to the smell of their favorite barley and bacon meal. Marianne says:
“Although it is simple, it is the perfect farmers meal that reminds me of my mother and of home. I always think of her and my childhood every time I make it!"
INGREDIENTS:
2 teaspoons of butter
1 cup of lingonberry jam
500 g (~1 lb)of fläsk or Bacon
1 onion
3 dl (1.25 cups) of barley
6 dl (2.5 cups) of milk ( 1.5% fat)
1 teaspoon of pepper
12 dl (5 cups) of water
2 tablespoons of syrup
1 teaspoon of salt
RECIPE:
*Serves 5 people. You must prepare the barley the 8-10 hours before.
Place barley into water for 8-10 hours

After the water begins to boil, turn the flame to medium and stir the barley. Cover the pot.

Strain the water from the barley

In a pot, add the water to the barley and salt, place on the stove under high heat.

Dice the onion

Preheat the oven to 200 degrees celcius

Add the milk
7.
Butter the interior of the pot
8.
Once the Milk boils, place the flame on low and cook for 20 minutes or until the barley absorbs to milk

Add diced onion into the barley and mix throughout

Add the syrup into the barley and mix throughout

Add the pepper into the barley and mix throughout

Lightly butter a ceramic cooking pan
13.
Pour the barley into pan and create a flat surface

Bake in the oven until it is browned on top

While Barley is Baking:
Add a teaspoon of butter to a frying pan

Cut flask (bacon) into 1 inch thick strips

Once the barley is browned on the top, serve the barley and bacon with lingonberry jam so that each person can serve themselves the desired amounts of barley, bacon, and jams as they like!

Fry fläsk (bacon) in butter until they are crispy or, as Marianne says: "as you like."

*Serves 5 people. If you want to make the meal for lunch you must prepare the barley the night before. If you want to make this meal for dinner you must prepare the barley in the morning.
