Tania's Wild Artichoke Penne Recipe

Wild artichokes hidden like gems within a sea of fresh pasta, parsley, and parmigiano reggianno. We learned this recipe from Tania after helping her harvest olives in Monasterace, Italy. Try out Tania's Recipe below!

Ingredients for Dita's Wild Artichoke Penne

  • 1 Red Onion - Diced

  • Olive Oil

  • 1 Handful Parmigiano Reggiano -Grated

  • 3 Cups Wild Artichokes

  • 1 Handful Parsley - Diced

  • 350 g Penne

Recipe for Dita's Wild Artichoke Penne

  1. In a medium-sized pot add 1/2 cup of olive oil and the diced onion. Place over medium heat

  2. Once the oil starts to sizzle and the onion becomes soft (approx. 3 min), add the artichoke hearts and stir

  3. After five minutes, add a cup of water and keep over medium heat.

  4. Cook until artichokes are soft (about 40 minutes)

  5. Mash the artichokes with a fork and add some fresh parsley

  6. Boil Penne in salted water, strain, and in a new serving dish combine the mashed artichokes with the pasta. Add a splash of olive oil, salt to taste, and stir.

  7. Top it all off with a hand of Parmesan and diced Parsley and Eat with Love!!
