Ante grew up on the island of Brač, off the coast of Croatia, where seafood is one of the main sources of food. Ante honors his family's culinary tradition by cooking recipes inherent to the island. Ante's White Scampi Risotto combines the famous Brač Sheep Cheese with native shrimp and scampi that is caught in the Supetar bay.
Searching for the golden pieces of baby shrimp through the creamy melted cheese thats clinging to the succulent, tender granules of rice is like a gastronomical treasure hunt. The crispy, salty bowl of parmesan is the perfect contrast to the smooth savory risotto.

Recipe
Parmesan Cheese Bowl

Place a frying pan over high heat
-
Add a drop of olive oil to the frying pan

Sprinkle a layer of Parmesan cheese on the frying pan

As the cheese begins to melt, use a spatula to lift up the edges of the cheese and quickly go around the cheese in a circle as it starts to brown.

Once the cheese has browned entirely, quickly remove it from the pan and place it on the base of a cup that is upside-down

While the cheese is still hot and maleable, form the cheese around the base of the cup by folding the cheese all around the base of the cup.

Serve the risotto in the Parmesan cheese cup and enjoy!

Hard Sheep Cheese

Parmeggiano Reggiano

Tbsp Butter
-
1 cup Arborio Rice
-
Olive Oil
-
4-5 Scampi
-
200 g Baby Shrimp
-
Handful of Parsley
-
2 Cloves Garlic
-
1/3 cup of White Wine
-
Rinse the rice and drain it well
-
Bring 3-4 cups of water to a boil and add the rice
-
Once the rice is al dente, strain the rice and set aside

Dice up the garlic and parsley
-
Heat the oil in a large saucepan over medium heat; add the scampi, shrimp, parlsey, garlic and wine in a pan and sauté
-
After a few minutes add 3/4 cup of water
-
Once the shellfish is fully cooked (they will turn from clear to white), add the rice to the pan and continuously stir on high heat, allowing the rice to absorb the liquid

Add butter and grate sheep cheese into risotto

Once cheese and butter are fully mixed taste the risotto to see if salt or cheese is needed

Serve warm on plate or Parmesan cheese bowl (see below)
