Baking Equipment needed:

Mixing bowl

Cookie sheet
Ingredients:

3 egg whites

125 g raw sugar (5/8 cup)

300 g fine ground almond (3 cups

pinch of sea salt
-
1 tsp cinnamon
-
zest from one small lemon
RECIPE
Prep Time: 10 Min.
Bake Time: ~ 15 Min.
Makes 12 - 14 cookies

Preheat the oven to 180°C (350°F)

Combine all ingredients in a mixing bowl and mix until all ingredients are evenly distributed. It should be a wet dough (see consistency in video). O These cookies taste the best when you use freshly ground almonds. If the dough is too dry add more egg yolk and if it is too wet add more almond flour.

Using a tablespoon plop the cookie dough onto a buttered cookie sheet or better yet, baking paper, and bake until golden brown.
